While most families will be sitting down to dinner this year and topping it off with the traditional pumpkin or apple pie my family will be enjoying something a little different for dessert! Each year my kids ask for the same thing, my scrumptious caramel apple cookies. They are a bit time consuming, so be sure to have your turkey in the oven and your taters ready to mash before accepting this creation.

You will need a tube of sugar cookie dough, 1 package 8oz cream cheese, 1/2 cup of creamy peanut butter, 1/2 cup packed brown sugar, 2 tbls whole milk, 4 cups sliced green apples, 1 can of Sprite, 1 tsp ground cinnamon, 1/2 cup caramel topping (I do not recommend using sugar free) and a 1/2 cup chopped peanuts, walnuts or pecans

Preheat the oven to 350  degrees. Cut your apples into small slices (I recommend the size of a dime). In a medium size bowl pour your can of Sprite (or any lemon lime soda will do) into it and add your sliced apples. The lime soda will prevent the apples from browning and give them a little extra zip in their flavor. Press out 6-12 cookies (depending how large you would like to make them) onto a greased cookie sheet and then bake for 12-17 minutes, or until golden brown. While the cookies are baking, in a large bowl beat cream cheese, peanut butter, brown sugar and milk until smooth.

After pulling the cookies from the oven, give them ample time to cool. Once they are cooled spread mix onto each cookie, covering the entire top of cookie. Remove your apples from the soda and dab them dry. Arrange the apples atop the cookies, you can add a few or pile them on! Then take your caramel topping and drizzle it across your cookies, then sprinkle with nuts and add just a small dash of cinnamon.
