Taco truck lovers...get ready to have all you want and save a bunch of calories, too!  Taco truck tacos are different than the tacos I grew up with in that they don't have cheese, cabbage instead of lettuce, and no ground meat.  Why are they so good?  I think the corn tortilla has a lot to do with it...soft, not crunchy. And the meat is seasoned to perfection.  So, here's what I came up with and let me tell ya, it's excellent.

Woody's Taco Truck Tacos

2-3 boneless chicken breasts cut in cubes (raw)

Fresh Lime

Radish slices

Small soft corn tortillas

Chopped cabbage

Salsa of your choice

Chili Powder, cumin, red pepper powder (cayenne), garlic powder, onion powder, salt & pepper.

In frying pan, sprinkle above ingredients over chicken cubes to taste.  I use more chili powder, and a smaller amount of the rest.  Toss and stir on medium heat until cooked thru. Now chop chicken a little finer.

Heat a clean frying pan to med-hi. While the taco trucks use two torts, we're gonna use one and save a few cals. Give hot pan a couple swipes with cooking spray and throw a tortilla on.  Spray top of tort and flip when ready.

Top tortilla with chicken, chopped cabbage, radish slice and drip lime juice all around. Add your fav salsa and you're set!

Spraying the tortillas instead of submerging them in oil saves so many calories, and the chicken and the rest of the ingredients are nearly fat free!
