A Vegan Thanksgiving...What Would You Cook?

My Son's Girlfriend is Vegan and it's Thanksgiving at my house this year.

I'll be cooking the traditional meal Turkey, stuffing etc...But would like to add some great Vegan dishes for her.

Any ideas?
