We actually make these for appetizers during summer BBQs too. So easy to make and crazy delicious with the hot of the jalapeno and the cool of the cheese filling.

Just slice the whole jalapenos in half length wise, rinse out the seeds and pat dry. Fill with cream cheese or my favorite...pimento cheese. The flavor of pimento completely compliments the jalapeno. I can only find the pimento cheese in the picture at Yoke's in West Richland...the other Yoke's don't carry it.

Embasa brand jalapenos are my favorite...plenty hot but not so hot that you can't eat a bunch of these during the game or before dinner.
