New Spicy Twist to Street Tacos
There are only a few things in this world that I love more than street tacos and one of those things is Thanksgiving dinner. So I thought, why not incorporate Thanksgiving into my street tacos? It doesn't sound very good at first thought, but let me tell you, I discovered a FABULOUS concoction, and is a new favorite in my house.
Street tacos, topped with a spicy cranberry sauce, work so well! The best part is it's very simple. Lemme esssplain...
You will need:
Tacos! Whether you make them from scratch or run down to your favorite taco truck, the most important thing here, is you need tacos. You will also need:
12 oz bag of cranberries
1 lime
Chopped Pickled Jalapenos (1/2 cup depending on your spice preference)
1/3 cup water
1/3 cup orange juice
1/3 jalapeno juice (from pickled jalapeno jar)
2/3 cup granulated sugar
1/3 brown sugar (tightly packed)
1/2 cup chopped cilantro
Combine sugars, water, orange juice, and jalapeno juice, and stir over medium heat, until dissolved. Once completely dissolved bring to a boil, then add your cilantro, jalapenos and cranberries. Stir in freshly squeezed lime juice, and continue to stir occasionally for 15 minutes or until the berries have all burst. The longer you cook your berries, the thicker your sauce will become. Remove from heat and let stand for 20 minutes. Cover and refrigerate for 2 hours.
You don't have to refrigerate it, I just like the way it stands better after it has chilled. It is now ready to top your tacos, and just a dollop is all you will need! You can reheat it if you don't want to add it cold to your tacos, either way, it is a delicious addition to yummy street tacos. Enjoy!
