The Dude With the Food Presents ‘Dinner in a Pumpkin’ [RECIPE]
This is not a recipe I’ve tried, but something my coworker shared. He said it’s delicious and I want to try it so bad. It’s easy and so much fun! Here’s what you need:
1 big pumpkin (pop the top and clean out the inside)
1 pound of hamburger
1 can of Cream of Chicken or Cream of Mushroom (Cream of Celery or Cheese Soup would probably also work)
1 small onion (sauteed)
3 cups chopped mushroom (sauteed)
2 cups chopped veggies (carrots, peppers, celery, broccoli, cauliflower, green beans — your choice)
1.5 cups of rice
Throw it all into the pumpkin together and mix, then bake at 400-425. Some versions of this recipe say to bake for one hour. My friend said it’s never been done in less than two hours so he recommends 2-3 hours. I recommend checking it with a meat thermometer after one hour. It needs to be about 150 degrees inside — plus the pumpkin needs to be tender.
The nice thing about this recipe, however, is if it’s taking too long, you can just slice the pumpkin, move the insides to a pan to finish cooking and put the pumpkin back in the oven to bake until soft.
If your pumpkin is too small, you can cook the rice separate and serve the dinner over the rice.
Since this is more a method of preparation than a recipe, there are dozens of variations with the meat, and the kind of rice, and the spices you can use. Have fun!
