Nothin' like Comfort Food on a cold winter day! But, if you're like me, you want to get that hearty satisfying feeling from something that tastes great, but without unhealthy ingredients like gluten, preservatives or anything processed.

So, I pulled out a big stew pot and began pulling Veggies out of my fridge! Hearty Vegetable Soup on hand is always a good idea!

Low on calories, with lots of flavor! And, if you're NOT worried about calories, I also made some delicious gluten free cornbread to go along with.

The thing about Veggie soup is you can put in it whatever vegetables YOU prefer!

I started with a saute in olive oil of a bit of fresh garlic and 1 whole onion cut up.

Once caramelized a little, I added a head of green cabbage cut up, 1Lg Yellow Pepper, 1 Lg Red Pepper and 1 Lg Orange Pepper. I also chopped up one full bunch of Celery! With the head leafs all included. I then threw in some chives, and 1 Green Onion. a bunch of Baby Carrots cut in small pieces, and 1 can stewed tomatoes.

Then I made some chicken stock broth. Now I don't eat meat anymore, but I used 'Better than Bouillon' Chicken base. And made the broth to taste and added that to the mixture.

Let it simmer on the stove for awhile and Ta-da! I LOVE this soup!

It is so satisfying and has amazing flavor! I can't wait to start a Veggie Garden this Spring, to make this soup even better!

I then got to work on some gluten free cornbread which I like to just crumple up on top of my bowl of soup! I buy the Red Mills Corn meal and follow the recipe.

With such a big pot of it, you can stick it in containers and take to work for lunch!
