Faith Martin’s Healthy Gluten Free Muffins That Taste Great! [VIDEO]
There's nothing like a hot buttered muffin and a hot cup of tea to start your day! I think a good healthy muffin that is gluten-free and low on sugar and filled with fiber is a good thing!
So I'd been experimenting with ingredients to come up with a muffin that has enough fiber (like a bran muffin) but that actually tastes good! And is good for you!
I find if I eat gluten, my body hurts! I get inflamation in my joints from it I think. So, If I stick to NO gluten diet, low on sugar too. I feel a lot better!
I grabbed a muffin recipe that my room-mate Karen uses, and I substituted a few things and made these Muffins last night!
I just clumped them in the muffin tins so they look kind of chunky! But honestly I didn't think they would rise, or really turn out very well, and it was late...so I sorta threw it all together and wanted to fit it all in one batch! lol
I was pleasantly surprised!
Bran is a main ingredient in a 'Bran Muffin' so I needed to find a good bran substitute. So I used ground flax seed. I also substitued the wheat flour with Almond Flour, Coconut Flour and ground Steel Cut Oats. I added Chia Seeds as well and Pecans. I also used Pink Hymalayan Sea Salt.
Sof you want a Gluten Free Muffin with some added nutrition try the substitutions. Vary it with whatever you'd like or experiment on your own with things. I thought about puttting in Applesauce too.
I was surprised that these rose so well without any wheat in them. And they are fluffy and lighter than I expected too! There is only 1/3 C Brown sugar in them and that's not too bad.

Here's the Basic Recipe! And don't forget to use the substitutions if you want to make it Gluten Free!
KAREN'S MUFFINS
Mix in a small bowl
2 LARGE EGGS (perferably farm raised and cage free)
1/3 C Brown Sugar
2 Ripe Bananas mashed
1 C Butter milk
1C Un-processed Wheat Bran (I substituted Ground Flaxeed here)
1/4 C Coconut Oil (melted) Possibly Sub-Avacado Oil, Hemp Oil, etc.
1 t Vanilla
Separately Mix:
1 Cup Whole Wheat Flour (Sub-Almond Flour, Coconut Flour, & finely ground Steel Cut Oats.
1 1/2 t Baking Powder
1/2 t Baking Soda ( I used a full teaspoon)
1/2 C Unsweetened Coconut Flakes (I added also a 1/2 C shredded Coconut) and about 1 Tablespoon of Chia Seeds.
Add in whatever Nuts you'd like. I used Pecans.
Mix all together with the Wet ingredients and rop into muffin tins.
Bake at 400 for abouty 20 min. Keep a close eye on them as ovens vary in temp!
