    Get the Right BBQ

    First thing you need to do is get the right BBQ. Anything that cooks with gas is BAD. BBQ is cooked with wood, low and slow. That means at a low temperature for a long time. I recommend a pellet grill like Louisiana Grill. This is not going to be cheap, but remember that you can BBQ all year long. I have cooked everything from ribs and brisket to a turkey and even pizza on my smoker grill.

    Learn About Meat

    I know it sounds strange but you need to learn about the different kinds of meat. You should try them all: pulled pork, spare ribs, baby back ribs, beef brisket, pork loin, roast beef, steaks, chicken. Learn about what to look for in each cut and how to cook them. They are all different.

    Try Making Your Own Rub or Sauce

    You can get good rub and sauce in the store, but making your own is so much better. Thanks to the internet, there are a thousand different recipe's you can try. Search for rubs that are good for the specific meat you are cooking. Your beef brisket rub will be different then your pulled pork rub and your seafood rub will be different from both of those. Try lots by making small batches and find recipes that you love.

    Learn About Bark

    No...not the kind on a tree. Bark is the "very" cooked part on the outside of slow cooked BBQ like brisket and it is one of the best things about BBQ. You can only get great bark on your BBQ with patience. Forming great bark on brisket takes at least 12 hours if not more like 15 hours of slow cooking at a low temperature around 200 degrees. If you can make great bark on brisket, then you are on your way to becoming great at barbecue.

    Take Your Time

    Great BBQ takes patience, time, the right tools, and great meat. You can mess up your food if you try to rush by doing things like turning up the temp, checking your meat too much, or taking it off early. Slow down and enjoy the process, make sure you set alarms and check on your progress every half hour at least.
